How do you "waterproof" your camera when you're in the kayak? Do you just keep it in a ziplock when it's not in use?

I keep my camera in a ziploc bag and then take it out to take a picture. I want to buy a different camera for use on the boat, because I have had a few close calls! Also, that would allow me to take some under water pictures, which would be fantastico!!
